Tuna Gratin

This dish is the definition of comfort food. Think of your classic tuna melt, only better. The way these flavors meld so beautifully will have you hooked for life.

4 cans albacore tuna in water

1⁄2 cup mayonnaise

5 medium-large Yukon Gold potatoes, peeled and sliced 1⁄4” thick

1⁄4 cup butter

2 tablespoons flour

1 1⁄2 cups milk

4 ounces shredded cheddar cheese

4 ounces shredded pizza cheese

1 teaspoon salt

1⁄2 teaspoon pepper

Preheat oven to 350°F.

Mash tuna with mayonnaise in a bowl and set aside. Soak potatoes in a bowl of cold water.

Melt butter in a small saucepan, then add the flour and stir to form a paste. Add milk and bring to a boil, then add cheese and stir until melted.

Arrange half of the potatoes in a 9x13” oven- to-table dish, then top with a layer of tuna, the remaining potatoes, and cheese sauce.

Cover and cook for 1 hour. Uncover and broil for 5 minutes for a crispy top.

Tip: you can do a fast microwave version of this dish. Use frozen potato knishes, tuna and mayo, and Muenster cheese. Microwave the potato knishe(s) for one minute in the plastic package. Next mix the tuna and mayo. Then mix the tuna and knish then put a few pieces of cheese on top and microwave for another minute and mix it all together.
