Stuffed Peppers

Stuffed peppers are one of those dishes that feel fancy but are secretly super simple. This easy one-pan meal comes together in minutes, making it perfect for a quick and satisfying dinner.


2lb ground beef

½ cup uncooked orzo pasta

2 frozen sautéed onion cubes

4 frozen garlic cubes

24 oz. jar marinara sauce, divided

½ teaspoon black pepper

½ teaspoon dried oregano

½ teaspoon dried basil

6-8 large bell peppers (any color), tops and seeds removed



  1. In a mixing bowl, combine the ground beef, uncooked orzo, onion cubes, garlic cubes, 1 cup of marinara sauce, salt, pepper, and herbs.

  2. Mix well until all ingredients are evenly distributed.

  3. Fill each bell pepper with the meat and orzo mixture, packing it in slightly to ensure that it fills the pepper but isn't too dense.

  4. Add a tablespoon of marinara sauce on top of each stuffed pepper.

  5. Add any extra meat and the rest of the marinara sauce to the bottom of the dish. Add 1/4 cup water to keep the peppers moist

  6. Stand the stuffed peppers upright in a 9x13-inch pan or oven to table dish and cover with foil or aluminium lid that fits the pan.

  7. Preheat your oven to 375°F

  8. bake for 60 minutes.

  9. Remove the foil and bake for an additional 15-20 minutes, or until the peppers are tender, and the filling is fully cooked.


For freezing raw then cooking

  1. Place the pan in a freezer ziploc bag and seal.

  2. Label with name of the dish, date it was made, and the cooking instructions, and freeze.

  3. When preparing to cook the peppers, remove the stuffed peppers from the freezer and let them thaw overnight in the refrigerator. If you need it to be ready sooner, use the cold water method by submerging the sealed bag in cold water for quicker thawing.
