Split Pea Barley Soup

Is there anything more comforting than a bowl of hearty soup on these cold winter days?! Tip: if the soup gets too thick, just add a cup of water. Recipe: 1 medium onion 3 tablespoons olive oil 3 stalks celery 1 cup baby carrots chopped 2 cups vegetable or chicken (“no-chicken”) broth 1 cup green split peas 1 cup yellow split peas 1 cup green lentils 1 cup pearl barley 14 cups water 1 teaspoon pepper 1 tablespoon salt Use a 6 quart or larger pot. Place the oil in the pot and heat it up, sauté the onions and celery in the oil. Add the carrots. Then add the broth. Add the peas and barley. Then the water, salt, and pepper. Cook for 45-60 minutes on a medium flame (covered).
