Tip: serve with sour cream and guacamole
Recipe:
2 tablespoons oil
2 red bell peppers, diced
2 green bell peppers, diced
2 yellow bell peppers, diced
2 medium onions, diced
8 large Del Campo Tortillas tortillas
16 ounces Mexican blend cheese
Heat oil in a large non-stick frying pan. Sauté onions until golden, then add peppers and sauté until softened. Set aside.
Microwave tortillas for 30 seconds to soften. Fill half the tortilla with sautéed vegetables and a small handful of cheese, then fold in half to close. Heat greased frying pan over medium heat, then cook quesadilla for about two minutes per side, until outside is browned and cheese is melted. Repeat with remaining tortillas.
