Like chocolate bark but that much more fun, these capture the essence of everyone’s favorite campfire treat! Begin with crisp rice cakes and add crushed graham crackers, gooey mini marshmallows, rich dark chocolate, and a hint of salt to create that perfect balance.
3 (3.5-oz.) bars dark chocolate
1 teaspoon coconut oil
10 thin rice cakes (such as Galil)
3 graham crackers, mostly crushed
1⁄2 cup mini marshmallows
1⁄4 teaspoon salt
1. Line a baking sheet with parchment paper and set aside.
2. Melt the chocolate with coconut oil in the microwave in 30-second intervals until completely smooth.
3. Break the rice cakes into bite-sized pieces and add them to a large bowl. Set aside a small handful each of the graham crackers and marshmallows, and add the rest to the bowl.
4. Add the melted chocolate and mix well. Transfer the mixture to the prepared baking sheet and spread evenly. Sprinkle the
reserved graham crackers and marshmallows over the top.
5. Place in the freezer for 1 hour to set, then break into pieces and enjoy
