Potato Latkes

Chanuka is fast approaching. Every year you say you’re going to put more effort into making sure your latka game is tops.


Every year you end up with mediocre patties that are just meh.


What’s the secret to great crispy latkas that are fluffy on the inside?

Recipe:

5 large potatoes

1 medium onion

3 eggs

2/3 cups flour

1 1/2 teaspoon salt

1/2 teaspoon pepper

Oil for frying


Peel the potatoes and shred. Grate the onion. Squeeze out the juice from the potatoes (it’s okay if it’s not squeezed all the way) Mix the shredded potatoes, grated onion, eggs, flour, salt, and pepper. Heat up a frying pan with canola or vegetable oil and fry the latkes by using about 1/3 cup of the mix per latke! This recipe yields about 8-10 latkes
