Pistachio Crusted Salmon

Now this is a recipe for the books! This pistachio crusted salmon is simple to make yet so complex looking and tasting! It has the perfect mix of nuts and citrus and sweetness!

Tip: place the pistachios in your food processor to get even size pistachios crumbs, instead of crushing them with a rolling pin in a ziplock.

Recipe:

1.5 lb salmon

2 tablespoons olive oil

2/3 cup pistachios

3 tablespoons orange juice

1 teaspoon lemon juice

2 tablespoons brown sugar

2 tablespoons honey

1 tablespoon minced garlic

1 teaspoon salt


Place the salmon in a 9x13. Smear each piece with olive oil. Place the pistachios in a ziplock bag and close it letting out all the air from the bag. Crush the pistachios using a rolling pin. Alternatively place the pistachios in a food processor. Then put the pistachios in a bowl, add the orange juice, lemon juice, honey, brown sugar, garlic, and salt. Mix. Coat the top of each piece of salmon with the pistachio mix. Bake uncovered at 350° for 25-30 minutes
