Pesach 2020 will definitely be a year to remember! Nothing went according to MY plan, but obviously the one above had HIS own plan. Our original plan of going to our parents and to a hotel program got cancelled and we had to stay home. Since we only knew last minute that we were staying home we decided to order food from a caterer, all I’m going to say is the food was a royal disaster! I ended up cooking everything on erev yom tov! By the time yom tov came I was so tired but I pushed through the seder and really enjoyed. Baruch HaShem the food was amazing, and I really enjoyed a quiet yom tov with my husband, lots of food, board games, walks, and sleep. It’s Chol Hamoed now and normally everyone would be taking trips and doing fun activities, but this year, there’s nothing to do! So I decided to have some fun and put together a pretty brunch with our favorite Pesach breakfast and lunch foods.
Matzo Brie, no exact recipe, break matzo into one inch pieces, place it in a bowl of warm water and let it soak until the matzo is very soft, drain the water. Crack some eggs and whisk them together and add the matzo in, add some salt and cinnamon and fry it up in some butter or oil. Serve with maple syrup
