Peanut Krispy Ice Cream Squares

It’s already hot enough in the kitchen and the clock is ticking. You ask yourself, “What can I make for dessert that’s tasty, elegant, and simple as a dimple?!” Smile, because this is a no-bake dessert! I love this recipe because instead of getting a jumble of small bits of chocolate chips, fudge swirl, nuts or whatever you might get in tub of ice cream, you get two distinct layers of pure goodness! Not just a bit here and a bit there, but two individually yummy layers - a two for one deal! Who doesn’t want that?! So simple to make, and with only four ingredients, this dessert made it to my top five Tasty N Simple dessert list pretty quickly. Yield: One 9x13 pan

Tip: drizzle chocolate syrup on the plate before placing down the ice-cream square for pretty display.

4 cups Rice Krispies

1 cup brown sugar

1 cup peanut brittle crunch

1 cup peanut-butter

1/2 stick Betterine

1 tub parve ice-cream


To make the crunch, Place Betterine, peanut-butter, and brown sugar in a microwave safe bowl and place it in the microwave for 1 minute; stir. Mix the Rice Krispies, peanut-butter brittle and peanut-butter mixture together. place half the crunch at the bottom of a 9x13 pan. spread the ice-cream on top.place the rest of the crunch on top. freeze. cut into squares right before serving.
