Oatmeal Chocolate Chip Cookies

I love a chewy oatmeal cookie, especially when it’s stuffed with chocolate chips! Aside from these cookies being so tasty and simple, they freeze really well! I usually make double the recipe and freezing half the cookies, and I put the other half in my cookie jar in the corner of my counter. Tip: take the cookie dough and make balls and bake them in that shape and they will flatten out into the perfect cookie shape on their own.

Recipe (not my own recipe)

4 eggs

1 cup sugar

1 Tablespoon vanilla sugar

1 1/2 cups brown sugar

1 cup oil

3 cups quick oats

3 cups flour

1 teaspoon salt

2 teaspoons baking soda

1 1/2 cups chocolate chips

Use a mixer (or immersion blender) to cream together the eggs, sugars, and oil. Next add the quick oats, flour, salt, and baking soda. Mix until you have a cookie dough. Add two cups of chocolate chips and mix. Form into cookies and bake for approximately 10 minutes or until light brown.
