Mocha Muffins

Sometimes drinking coffee isn’t enough, like they say you can never have too much of a good thing. Have a muffin, have 2 , have 3 they’re so delish! Funny story, the first time I made mocha cake I used caffeinated coffee and I literally couldn’t sleep at night so be sure to use decaf! Tip: you can top it with your favorite icing, you can’t go wrong ☕️ Recipe: 2 eggs 1/2 cup oil 1 cup brown sugar 1 cup sugar 1/4 cup instant coffee 1 cup HOT water 3/4 cup cocoa 2 cups flour 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon salt (1 cup chocolate chips)

Heat the oven to 350°. Whisk together the eggs, sugars, and oil. Add the coffee and hot water and mix. Add the cocoa, flour, baking soda, baking powder, and salt and mix. (Add chocolate chips). Use an ice-cream scooper to fill the muffin cups with 1 scoop of batter. Bake for 30 minutes.
