If only the third time was a charm for this cake, however it took loads of tweaking and grocery shopping to get this cake to be perfect and I’m pretty sure I nailed it! It’s sweet, spongey, and oh so delicious, just in time to add to your Rosh Hashana cooking/baking list! Who’s ready to dip the apple in the honey already?! (not me! Can’t believe it Rosh Hashanah already!)
Tip: no need to take out your heavy mixer, use a whisk to mix the ingredients!
Recipe:
2 eggs
3/4 sugar
1/4 light brown sugar
1/2 cup oil
1 cup honey
1 teaspoon cinnamon
1 teaspoon baking soda
2 teaspoons baking powder
1 cup (boiling) hot water
2 1/2 cups flour
1/4 teaspoon salt
Heat oven to 325°. Mix the sugars and eggs until combined. Add the oil and honey, and mix. Add the cinnamon, baking soda, and baking powder and mix. Add the hot water and mix. Add the flour and salt and mix. Spray a loaf pan with (pam) oil. Pour in the batter. Bake (uncovered) at 325° for 55 minutes or until a toothpick comes out clean.
