A blend of aromatic spices gives this schnitzel its oomph. And perfectly complementing it is this zesty chile lime sauce, adding an irresistible kick that lingers on the taste buds.
Serves 4
1 egg
1½ cups plain breadcrumbs
2 teaspoons light brown sugar
2 teaspoons dried parsley
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
½ teaspoon dried thyme
1 lb. chicken breast, cut into strips
Oil, for frying
Chile lime sauce:
1 cup mavonnaise
2 tablespoons (Trader Joe’s) Chile Lime Seasoning Blend
1 tablespoon fresh lime juice
1 teaspoon honey
Salt, to taste
1. Prepare the chicken: Place 2 bowls on your work surface.
Add the egg to the first bowl and beat lightly.
2. In the second bowl, mix the breadcrumbs, sugar, parsley, basil, oregano, garlic powder, onion powder, salt, and thyme.
3. Coat the chicken strips in the beaten egg and then in the breadcrumbs.
4. In a frying pan, heat oil over medium-high heat. Add chicken and fry until golden brown, about 3 minutes per side.
5. Prepare the chile lime sauce: In a bowl, whisk together the mayonnaise, chile lime seasoning, lime juice, honey, and salt.
NOTE: If you prefer a thinner sauce, add a bit more lime juice or a splash of water and whisk until smooth
