Crunchy Quinoa Harvest Salad


This salad invites you to experience a symphony of flavors and textures. The combination of fresh produce, crunchy elements and a zesty dressing creates a delightful harmony. I’ve been loving the addition of quinoa to my salads lately. It’s a healthy carb that really amps up the satisfaction factor, making every tasty bite filling and nutritious.


2 Persian cucumbers, diced

1 Cortland apple, diced

3 tablespoons Craisins

1 cup romaine lettuce, diced

½ cup kale, diced

1 scallion, sliced

1 cup quinoa, cooked according to package


Dressing

3 tablespoons olive oil

1 tablespoon vinegar

½ teaspoon pepper.

2 tablespoons lemon juice

1 teaspoon Himalayan pink salt


Directions

1. Combine salad ingredients in a serving bowl.

2. Whisk together dressing ingredients.
