Yapchik - the ultimate comfort food that's a delightful twist on traditional meat and potatoes. tender chunks of flanken nestled in layers of golden potatoes, slow-cooked to perfection for a melt-in-your-mouth experience. When you're craving something different from the usual Cholent, Yapchik comes to the rescue with its rich flavors and hearty texture. PS I also serve this for dinner every so often it’s an easy crockpot set it and forget it type of meal.
10-12 golden potatoes (Idaho works fine too I sometimes do half golden and half ago) , peeled
1 large yellow onion
1 tablespoon salt
1 teaspoon pepper
3⁄4 cup neutral oil, such as canola or vegetable
3⁄4 cup water
6 eggs
1 1/2 lb. boneless flanken, cut into large cubes
1. Using a food processor with the S blade, process 3 potatoes, the onion, salt and pepper until they turn to mush.
2. Add in the oil, water, and eggs, and pulse to incorporate.
3. Switch to the shredding blade and shred the rest of the potatoes. Mix them into the rest and place it all in a 7-quart or larger Crock-Pot (lined with Reynolds slow cooker liner).
4. Add in the flanken cubes and distribute them all over the yapchik. Cover and cook for 24 hours on low setting. (Or high setting for 6-7 hours)
You can make this in the oven by baking it at 350° covered for 6 hours
