Copycat Chipwich



I love the versatility of an Icecream sandwich. You can keep it old school with vanilla ice cream and mini chocolate chips (as pictured here) or customize it with your favorite ice cream flavors and toppings. By the way these cookies are literally perfection you can skip the icecream altogether and serve them on their own!


Recipe:


Yields: 6-8

2 eggs

3⁄4 cup granulated sugar

3⁄4 cup brown sugar

1⁄2 cup canola or vegetable oil

1 teaspoon vanilla extract

2 1⁄2 cups flour

1⁄2 teaspoon salt

11⁄2 teaspoons baking powder

3⁄4 cup chocolate chips

1 (56-oz.) container pareve vanilla ice cream

1 bag mini chocolate chips


1. Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.


2. In a bowl, combine eggs and sugars. Mix in oil and vanilla extract.


3. Add flour, salt, and baking powder. Mix to incorporate, then stir in 3⁄4 cup chocolate chips.


4. Shape cookies, keeping in mind that the shape won’t change much during baking. Place on the prepared baking sheet and bake 12 minutes.


5. Transfer to a cooling rack and let cool completely.


6. Flip over half the cookies and top with a scoop of ice cream, large enough to cover the cookie. Place a second cookie over the ice cream to form a sandwich.


7. Pour mini chocolate chips onto a plate. Roll the sandwiches in them to coat the sides.


8. Wrap individually in plastic wrap and freeze until ready to serve.
