Citrus Vinaigrette Salad


Some of you may know that I don’t love salad dressing, so this post may come to you as a surprise.


Lately I’ve been trying to incorporate more salads into my daily eating. So, I’ve been trying to figure out how to make my salads more exciting.


First I started adding different types of lettuces, then I added some nuts for that crunch, and then decided to experiment with some olive oil and juices until I came up with the most perfect vinaigrette!


What’s the difference between a dressing and a vinaigrette?

Dressing is usually mayonnaise based, and I don’t eat mayonnaise.


That’s why I avoid dressings.


Vinaigrette is oil with acid and spices, and I found the perfect mix of ingredients to make my salads taste delicious!


Sometimes all you need a simple salad, with a delicious crunch, and a dressing that has the perfect balance of tangy and sweet citrusy dressing.


I’ve got the perfect one for you!


Salad Recipe:

Romaine lettuce

radicchio

Endive

Frisée

(Optional:watercress)

Persian cucumber

Cocktail tomatoes

Slice the cucumber diagonally, cut the tomatoes in half down the center. Mix everything together and enjoy!


Citrus Dressing recipe:

6 T olive oil

2 Tablespoons lime juice (juice of 1 lime)

3 tablespoons lemon juice

4 tablespoons orange juice

1/2 teaspoon salt

2 Tablespoons honey

1 teaspoon white vinegar


Fresh squeezed juice is best


Mix the vinaigrette ingredients in a dressing bottle, you will have enough dressing for a few salads, obviously depending on the size of your salad.
