In honor of Cinco de Mayo I collaborated with Del Campo Tortillas to bring you this amazing salad. My in-laws actually own this brand and one of the reasons their products are soo good is because my father in law is from Mexico. This is authentic Mexican food and it’s truly delicious! I not only collaborated with them because they are my in-laws I truly love their products and use them almost every day! They make the absolute best kosher tortillas, tacos, and Mexican spices! As you can see there’s no dressing and that’s because I don’t eat salad dressing so I didn’t create a dressing to go along with this dish but chose your favorite creamy lemon dressing to top it off your style.
Tip: you can skip the salad aspect and just make chicken fajitas they are sooo delicious, but you have to eat them in a Del Campo Tortilla.
Chicken fajita recipe:
3 chicken breast
3 tablespoons Del Campo Tortillas Fajita spice
1 red bell pepper
1 green bell pepper
1 yellow bell pepper
1 onion
Tortilla stick croutons recipe:
2- 8 inch Del Campo Tortillas Tortillas
Olive oil
Season both sides of the chicken breast generously in the fajita spice, heat a large pan on medium heat and add a few tablespoons of olive oil. place the chicken in the pan and cook each side for 5 minutes. Next remove the chicken and let it rest. Slice the peppers into thin strips and slice the onion into half circles. And sauté. The vegetables will pick up all that extra fajita seasoning that’s left in the pan. Once they’re all sautéed you can build your salad.
For the tortilla stick croutons, cut the tortillas in half and then cut them into strips. Heat up a frying pan with a few tablespoons of olive oil and then drop the sticks into the oil. Fry until crispy and light brown. Place the sticks onto a Paper towel to drain the excess oil and then add them to the salad.
Build your salad, place some spring mix and romain lettuce in a bowl, slice the chicken and add it to the bowl. add tomato, avocado, and the sautéed peppers and onion. And of corse the tortillas sticks. Squeeze some lime and pour your favorite creamy citrus dressing or even some salsa. Enjoy!
