Cabbage Soup

Some soups are enjoyed by adults only, but this savory and flavorful soup will be popular with the whole family. Bon appétit!


Yield: 6 servings


1/2 cup olive oil

1 large onion, diced

8 stalks celery, sliced

5 large carrots, sliced

1 (16-oz.) bag shredded green cabbage

1 (8-oz.) can diced tomatoes

32 oz. vegetable broth

5 cups water

1 tablespoon salt

3 tablespoons light brown sugar

1 teaspoon parsley flakes

½ teaspoon onion powder

½ teaspoon garlic powder

2 tablespoons lemon juice

Pepper, to taste


1. In a pot, heat the oil. Add onions, celery, and l carrots and saute until onions are translucent.


2. Add cabbage, tomatoes, broth, water, and seasoning. Bring to a boil, then reduce to a simmer and cook for 45–60 minutes.
