Have you ever been to a farmers’ market on a beautiful summer day and basked in the delightful aromas of fresh produce and baked goods? This recipe captures that spirit with its wholesome farmstand flavor and mouthwatering scent.
Yields 1 9x13
Recipe:
2 cups flour
1⁄2 cup sugar
1 teaspoon cinnamon
1 teaspoon vanilla sugar
2 sticks margarine
1 (11.64 oz.) jar apricot jam
1⁄4 cup old-fashioned oats
1. Heat oven to 350°F.
2. Mix the flour, sugar, cinnamon, and vanilla sugar together.
3. Add the margarine and use your hands to incorporate it into the dry mixture until crumbs form.
4. Line a 9x13 pan with parchment paper.
5. Place 3⁄4 of the crumb mixture at the bottom of the pan and press it down to make a crust.
6. Spread the jam carefully over the crust in a thin, even layer.
7. Add the oats to the remaining crumbs and toss to mix.
8. Sprinkle the crumbs on top of the jam.
9. Bake for 25 minutes.
10. Cool completely before slicing or digging in.
